Maple & Cinnamon Granola

1/3 cup maple syrup

3 Tbs coconut oil

2 cups old fashioned oats

1/3 cup coconut flakes

1/3 cup raw slivered almonds

1/3 cup roughly chopped raw pecans

1/3 cup raw pepitas or raw cashews

1 tsp cinnamon

1/4 tsp salt

Preheat oven to 320. Line a baking sheet with parchment paper.

In a small saucepan over low heat, melt coconut oil with maple syrup. Mix together remainder of ingredients in a medium sized bowl, then pour maple coconut mixture over and incorporate. spread evenly onto lined baking sheet and bake for 22 minutes. Watch carefully as baking temps and times can vary. Once you smell it and it’s golden brown remove from oven and let cool completely before breaking up and storing.

This granola is sweet enough to enjoy with a good quality plain yogurt. Top with strawberries/bananas/blueberries or even dried apricots - whatever you want! You can even try as a cereal with milk. I make a double recipe now because it goes so fast!
